Fats are esters of glycerol and long chain carboxylic acids. Fats occur widely in plants and animals as a means of storing food energy, having twice the calorific value of carbohydrates. Fats derived from plants and fish generally have a greater proportion of unsaturated fatty acids than those from mammals. Fats may be either solid or liquid at room temperature, depending on their structure and composition. Unsaturated fats are liquid at room temperature.
Plant oils may be hardened by the addition of hydrogen atoms, converting double bonds to single bonds. This process is known as hydrogenation. Hydrogenated vegetable oils are often present in margarine and other processed foods.
Alkali hydrolysis of fat with sodium hydroxide it gives glycerol and soap (i.e. a mixture of the sodium salts of the fatty acids).
Hemiacetals are organic compounds having the general formula R2C(OH)OR’ (R’ ≠ H), derived from aldehydes or ketones by formal addition of an alcohol to the carbonyl group. Hemiacetals are generally unstable compounds. In some cases however, stable cyclic hemiacetals can be readily formed, especially when 5- and 6-membered rings are possible. In this case an intramolecular OH group reacts with the carbonyl group. Glucose and many other aldoses exist as cyclic hemiacetals whereas fructose and similar ketoses exist as cyclic hemiketals. Originally, the term was confined to derivatives of aldehydes (one R = H), but it now applies equally to derivatives of ketones (neither R = H).
Iodine was discovered by Bernard Courtois (France) in 1811. The origin of the name comes from the Greek word iodes meaning violet. It is shiny, black, non-metallic solid with characteristic odour. Sublimes easily and as a gas it is violet and intensely irritating to the eyes, nose and throat. Iodine occurs on land and in the sea in sodium and potassium compounds. Required in small amounts by humans. Once used as an antiseptic, but no longer due to its poisonous nature.
Ketals are organic compounds formed by addition of an alcohol to a ketone. If one molecule of ketone (RR’CO) reacts with one molecule of alcohol (R"OH) then a hemiketal is formed. The rings of ketose sugars are hemiketals. Further reaction produces a full ketal (RR’C(OR")2). This term, once abandoned, has been reinstated as a subclass of acetals.
Standards are materials containing a known concentration of an analyte. They provide a reference to determine unknown concentrations or to calibrate analytical instruments.
The accuracy of an analytical measurement is how close a result comes to the true value. Determining the accuracy of a measurement usually requires calibration of the analytical method with a known standard. This is often done with standards of several concentrations to make a calibration or working curve.
A primary standard is a reagent that is extremely pure, stable, has no waters of hydration, and has a high molecular weight.
A secondary standard is a standard that is prepared in the laboratory for a specific analysis. It is usually standardised against a primary standard.
Styrene is an unsaturated hydrocarbon (C6H5OC2H3O) colourless, toxic liquid with a strong aromatic aroma. It is soluble in alcohol, ether, acetone, and carbon disulfide, but dissolves only slightly in water. It is used to make plastics such as polystyrene, ABS, styrene-butadiene rubber styrene-butadiene latex and unsaturated polyesters.
Thermometers are devices for measuring temperature. Linear and volume thermal expansion are macroscopic properties of matter, which can be easily measured, relative to measurements of microscopic properties, on the basis of which, temperature is defined. Thermometers based on thermal expansion are secondary instruments that is, they have to be calibrated in comparison to a standard thermometer. In a thermometer with liquid, mercury or alcohol is placed in a small glass container. If temperature increases, the liquid undergoes volume expansion and rises in a capillary. The level of the raised liquid is the measure of temperature. Mercury thermometers measure temperatures in the temperature range between -39 °C and 300 °C. Alcohol thermometers measure lower temperatures. Bimetal thermometers have a spiral spring, which consists of two metals with different coefficients of linear expansion. When temperature changes, metals undergo different change in length and the consequence twisting of the spring is transferred to a pointer, the deflection of which is the measure of temperature.
