The International Union of Pure and Applied Chemistry (IUPAC) is a non-governmental organization of member countries that encompasses more than 85% of the world’s chemical sciences and industries. It was formed in 1919 with the object of facilitating international agreement and uniform practice in both academic and industrial aspects of chemistry.
Alanine is hydrophobic amino acids with aliphatic side chain. It is the second simplest amino acid, but used the most in proteins. The nonpolar hydrophobic amino acids tend to cluster together within proteins, stabilizing protein structure by means of hydrophobic interactions. Alanine is a nonessential amino acid, meaning it can be manufactured by the human body, and does not need to be obtained directly through the diet.
Arginine is an electrically charged amino acids with basic side chains. It is one of the least frequent amino acids. As a group the charged amino acids are important for making proteins soluble. These residues are generally located on the surface of the protein. Arginine is well designed to bind the phosphate anion, and is often found in the active centers of proteins that bind phosphorylated substrates. As a cation, arginine, as well as lysine, plays a role in maintaining the overall charge balance of a protein. Although arginine is considered an essential amino acid (it must be obtained through the diet), this is true only during the juvenile period in humans.
Asparagine is neutral amino acids with polar side chains. The polar amino acids are an important class of amino acids since they provide many of the functional groups found in proteins. Asparagine is a common site for attachment of carbohydrates in glycoproteins. In general this is not very reactive residues. Asparagine is amide derivative of aspartic acid. Asparagine is not essential for humans, which means that it can be synthesized from central metabolic pathway intermediates and is not required in the diet.
Aspartic acid is an electrically charged amino acids with acidic side chains. As a group the charged amino acids are relatively abundant and are generally located on the surface of the protein. Aspartic acid and glutamic acid play important roles as general acids in enzyme active centers, as well as in maintaining the solubility and ionic character of proteins. Aspartic acid (sometimes referred to as asparate depending on pH) is non-essential in mammals, being produced from oxaloacetate by transamination.
Cysteine is neutral amino acids with polar side chains. Because of its high reactivity, the thiol group of cysteine has numerous biological functions. It serves as a potent nucleophile and metal ligand (particularly for iron and zinc), but is best known for its ability to form disulfide bonds, which often make an important contribution to the stability of extracellular proteins. Cysteine is a non-essential amino acid, which means that it is biosynthesized in humans.
Glutamic acid is an electrically charged amino acids. It is one of the two amino acids that contain a carboxylic acid group in its side chains. These acids play important roles as general acids in enzyme active centers, as well as in maintaining the solubility and ionic character of proteins. Glutamic acid is commonly referred to as glutamate, because its carboxylic acid side chain will be deprotonated and thus negatively charged in its anionic form at physiological pH. Glutamic acid is referred to as a non-essential amino acid because a healthy human can synthesize all the glutamic acid needed for normal body function from other amino acids.
Electrode potential is defined as the potential of a cell consisting of the electrode in question acting as a cathode and the standard hydrogen electrode acting as an anode. Reduction always takes place at the cathode, and oxidation at the anode. According to the IUPAC convention, the term electrode potential is reserved exclusively to describe half-reactions written as reductions. The sign of the half-cell in question determines the sign of an electrode potential when it is coupled to a standard hydrogen electrode.

As a consequence of this definition, any potential developed in a galvanic cell consisting of a standard hydrogen electrode and some other electrode is attributed entirely to the other electrode
Glutamine is neutral amino acids with polar side chains. It serves as an important carrier of ammonia and contributes it to the formation of urea and purines. Glutamine is not recognized as an essential amino acid but may become conditionally essential in certain situations, including intensive athletic training or certain gastrointestinal disorders. It is synthesized by the enzyme glutamine synthetase from glutamate and ammonia.
Mercaptans are a traditional term abandoned by IUPAC, synonymous with thiols, a sulfur-containing organic compound with the general formula R-SH where R is any radical. This term is still widely used.
